Toast the bread and rub each piece lightly with garlic. Cook, shaking pan, until mushrooms are golden and starting to release their juice. Once hot, add the garlic and saute until fragrant. Add the mushrooms, salt and pepper, and another sprinkling olive oil.

Steps to make Mushroom Bruschetta:
  1. Heat a large frying pan throw in the butter, meanwhile chop the mushrooms.
  2. Once chopped throw them into the pan stirring well.
  3. Chop up the garlic leaving one clove whole and throw them into giving a good stir!

  5. Now throw in the herbs and seasoning stir well so the mushrooms caramelise! Add the mustard and stock so it sizzles!

  7. Pop the bread in a toaster/griddle or under a hot grill, you need it to be crunchy! When it’s done rub the garlic clove onto the hot bread!
  8. Simple spoon the mixture on to the two slices of toast and serve! Enjoy!
  9. Done and ready to serve!

Slice the larger mushrooms up, and leave the smaller ones whole. Add them all to the pan and give it a shake to toss the mushrooms in the oil. Add the chopped garlic and fresh herbs and shake the pan again. Mix diced tomatoes with balsamic vinegar in a bowl and set aside. Store mushroom mixture and crostini separately if needed.
