How to make:process Cucumber and Wasabi Brown Sushi Rolls:
  1. Wash the sushi rice. Add the rice and water to the pan and bring to the boil. Cover with a lid and simmer for 35 minutes or until the water has absorbed. Turn off the heat and leave to stand for a further 10 minutes.

Place a heaping teaspoon full of tuna tatare on one end of cucumber and roll. Remove from the heat and stir in the vinegar and a pinch of salt. Set over high heat and bring to the boil. Remove from heat and allow to cool. Serve with wasabi and coconut aminos for dipping.
