Use a stick blender, normal blender or food processor to blitz the soup till smooth. Add the oil, onion, garlic and jalapenos. If you use canned pumpkin, you may need more Swanson (R) Unsalted Chicken Broth to compensate. Also, if you do not have an immersion blender, you can use a regular blender pureeing the mixture in batches.

  2. Put all veges, garlic, chilli powder and onion powder in a large pot with enough stock to just cover bring to the boil then reduce heat and leave to simmer for 30 mins

  4. Once smooth with no lumps add in coconut and stir. Add back to a low heat.
  5. Thinly slice spring onions and chilli. Put a bit of parmesan on top of soup once served then top with sliced chilli and spring onion can also add sour cream.
  6. Done and ready to serve!
