Ingredients and seasonings must exist for make
  1. Take 4 slices sourdough bread (but can also be just normal bread)
  2. Use 4 eggs (ideally free range)
  3. Prepare 2 tomatoes
  4. Take 1 courgette
  5. Prepare 1 onion
  6. Prepare 2 cloves garlic (cut or mashed)
  7. Prepare 2 peppers (nice if different colours)
  8. Prepare 1 Aubergine (optional)
  9. Prepare 1 Avocado
  10. Prepare 1 tin chopped / plum tomatoes
  11. Take 1 tsp Paprika (smoked or normal)
  12. Prepare 1 pinch chili flakes (optional but does make it :-))
  13. Prepare 1 tbsp olive oil or equivalent to fry with (not extra virgin)
  14. Prepare 1/2 cup water
  15. Prepare Some grated cheddar to taste (optional)
  16. Prepare Salt & pepper

Add a tablespoon of olive oil, the juice of ½ a lemon and salt and pepper. Crush the avocados with a fork and set aside. Crack eggs and place in small bowl. Add a squirt of lemon juice and dash of salt to the water.

Instructions to make Fried Eggs on Ratatouille on spicy Avocado on Sourdough..:
  1. Cut the onions as you want them and fry for a few minutes to brown them in the oil.
  2. Add the cut up tomatoes, courgette, peppers, aubergine and water. Keep the heat high. As the water boils off, add the paprika, garlic and tinned tomatoes. Then turn the heat down to a simmer for 15-20 minutes (stirring as needed to stop any burning).
  3. While the ratatouille is simmering, open the avocado and mash it with the chilli flakes, a little olive oil and salt/pepper to taste.
  4. Toast the sourdough and when done, spread the avocado on it as you would butter.
  5. Fry the eggs so they have nice runny yolks. Add a little freshly grated pepper on top if you like pepper :-)
  6. Put the ratatouille on the avocado covered sourdough, the eggs on the ratatouille and then sprinkle with grated cheddar (Optional)
  7. Enjoy :-)
  8. Done and ready to serve!

Bring to boil and then reduce heat to simmer. Remove from poaching water and place on greens. Top with avocado sauce and black pepper. Combine all ingredients into a clean, wide mouth jar. Stir vigorously until it forms a smooth paste.
