Add both oats and the peanuts and stir with a spatula to combine. Divide the granola evenly between two rimmed baking sheets and spread with the spatula into a at layer. Pour the peanut butter mixture over the dry ingredients, stirring with a wooden spoon until evenly coated - the overall granola mixture won't be overly wet once combined so don't fret. Spread the granola into an even layer on the prepared baking sheet.

Step by step to make Peanut butter granola:
  1. Preheat your oven to 160C and get out a baking tray
  2. Chop your nuts and mix them with the oats in a large mixing bowl
  3. Measure out the peanut butter and mix with the syrup, salt, vanilla (if used) and cinnamon. Heat this mixture in the microwave for 20 seconds to help combine.
  4. Pour the peanut butter mixture into the oat and nut mix and stir through so everything is coated. If it looks too liquid, add some more oats.
  5. When everything is coated in the peanut mixture, transfer to the baking tray and spread evenly
  6. Bake in the oven for 10mins and then flip the mix so the bottom comes to the top
  7. Bake for another 10mins or until everything is browned (but not burnt!). Leave to cool.
  8. Once cooled, serve in a bowl with your choice of milk, fruits and seeds. Here I have sunflower seeds and dried cranberries.
  9. Done and ready to serve!

In a small bowl or glass measuring cup, combine the peanut butter and honey. Pour the peanut butter and honey over the oats and stir until oats are well coated. If you aren't using salted peanut butter, you can add a little salt. You can also cut the honey in half and use brown sugar to replace it. That will help to reduce the moisture in the mix.
