  11. Take 1/2 cup Barrio Fiesta Regular Shrimp Paste(bagoong alamang), to be served later

Add annatto powder and oxtail broth. Toss-in string beans and calabasa (kabocha squash). In a large wok, heat the olive oil medium heat Saute the garlic and cook until golden brown before adding onions Add the stock, ground peanuts, meat and peanut butter After pressure cooker, strain the liquid and keep it. Put the stirfried onions and garlic back with the meat.

Instructions to make Kare-kare(oxtail and tripe in peanut sauce):
  1. Boil the oxtail for 2 hours or until tender. If you have pressure cooker, cook it for 45minutes max. Then add the ox tripe and onions and boil for another 1 hour.
  2. On separate pan, blanch the bokchoy, string beans and eggplant and set aside.
  3. If the meat is tender, put Mama Sita's kare-kare mix, atchuete, salt and peanut butter. Let it boil in low heat for 10 minutes stirring occasionaly.
  4. Serve with blanched veggies and shrimp paste over hot rice. Enjoy! :)
  5. Done and ready to serve!

Add the peanut butter and simmer some more. In a large stock pot over medium high heat, add the vegetable oil and sear the pieces of meat until each side has a nice brown crust. This should be about one minute on each side. Sear in batches to not crowd the pan. Set aside the meat on a clean plate.
