Easy Steps to Prepare|Recipe} Sweet Potater tots the Drool, Perfect

Ingredients and seasonings required for prepare
  1. Take 2 large Sweet Potatoes
  2. Prepare 2 tbsp melted butter
  3. Prepare 3/4 cup Parmesan Cheese
  4. Take 1 pinch Salt
  5. Use 1 pinch Pepper
  6. Use 2 cup Potato Chips
  7. Use 1 tbsp Oil

Cool until they are cool enough to handle. Grate the potatoes into a mixing bowl. Add enough coconut flour to thicken and bind potatoes. Scoop potato mixture into balls or "tots".

How to make:process Sweet Potater tots:
  1. Preheat oven to 400°F. Using a fork, poke holes around the sweet potatoes. Place directly on the rack and bake for 50 minutes.
  2. In a food processor, turn the chips into very fine crumbs. (I used sweet potato tortilla chips)
  3. Peel off the skin and mash with the melted butter and parmesan cheese. Add salt and pepper to taste (Optional).
  4. Wipe down your baking sheet with a paper towel and cooking oil.
  5. Roll a tablespoon of the mixture into a ball. Roll the ball into the chip crumbs completely covering it.
  6. Evenly space out the tots on your baking sheet and bake for 15 minutes. Flip over and bake an additional 15 minutes. If it's not crispy enough, you can broil on high for 3 minutes each side.
  7. Serve with chipotle mayo dip, or sriracha and ketchup sauce.
  8. Done and ready to serve!

Heat a generous amount of coconut oil in a frying pan. This was part of the 'Cajun Birthday Lunch'. When I made plain old Tater Tots, I didn't think they could get any better. These came out so good, I made them for the Cajun lunch and they were WIPED OUT - totally gone by the end of the party. I will admit, I used my fryer this time and they came out extra.
