  26. Prepare 1/2 tsp Ground pepper *
  27. Prepare 2/3 cup Water
  28. Prepare 6 pcs Green cardamom *
  29. Prepare 2 pcs Black cardamom
  30. Prepare 7 Cloves *
  31. Prepare 6 cm stick Cinnamon *
  32. Prepare 7 g Fennel seeds *
  33. Prepare 3 g Bay leaves *
  34. Prepare 3 kg Water *
  35. Prepare 45 g Salt
  36. Prepare 1 small Alum(Fitkari)
  37. Prepare 10 pcs Bay leaves (to line the pan with) *
  38. Use 5-6 pieces Alubukhara (dried plums) *
  39. Prepare 1 tsp Rose petals (optional)
  40. Prepare 2 tbsp Birista *
  41. Prepare 1 tsp Biryani masala
  42. Prepare 2 tbsp Grated khoya kheer
  43. Prepare 1/4 cup Yakhni
  44. Prepare 1 tsp Lime juice *
  45. Take 1 pinch Saffron (steeped in 2 tsp warm milk) *
  46. Prepare 1 pinch Yellow food colour *
  47. Prepare 2 tbsp Milk *
  48. Take 1 tsp Kewra water *
  49. Prepare 2 tsp Rose water *
  50. Prepare 4 drops Meetha attar *
  51. Prepare 3 tsp Ghee *
  52. Use 2 tsp Butter

Do not wait until the onions burn which can make the curry bitter. When onions are brown, add ginger garlic paste and mix well together. Biryani Layer preparation: Take out the marinated chicken from the refrigerator. Take a deep and thick pan, put the marinated chicken on the base of the pan.

Steps to make Chicken dum biryani:
  1. Cut and washed the potatoes then apply some yellow food colour fry it in oil,once done keep it aside
  2. Cut the onions finely then add little corn flour sieve the excess then deep fry until golden brown
  3. In a mixing bowl add yogurt, birista, all the dry spices, and essence mix it then add the chicken pieces
  4. Marinate the chicken for 3 hours then heat a oil add the marinated chicken after few minutes add the fried potatoes,once cooked keep the potatoes, chicken and gravy or Yakhni separated
  5. In a big pan grease it with ghee then spread bay leaf, parallel cook the rice
  6. The chicken pieces, then potatoes after that add the yakni or gravy over it
  7. Now spread the cooked rice, then layer it with some birista, biryani masala
  8. Again layer it with rice, pour the saffron milk mixture, ghee, birista cover it with aluminium foil then cover it with lid, place the Kadhai over tawa on very low heat for 30 minutes, after this turn off the heat let the biryani set for 20 minutes then serve..
  9. Done and ready to serve!
