  5. Add the tomatoes, black pepper and salt and stir. Cover with lid and cook for 2 minutes

Instructions First, prepare the eggplant: Remove the stem end, then cut lengthwise into ½-inch-thick slabs and arrange on a baking sheet. Rinse the eggplant and pat dry.
